How to Store Tupperware in Your Kitchen

This is my first post in a while. I had a forced sabbatical when I broke my wrist and couldn't type. Come to think of it, I couldn't cook either, and had to rely on my husband for all nourishment. He could write his memoirs on how he came to appreciate Tupperware! All is on the mend now so back to work!

I often get questions on how to store a growing collection of useful Tupperware items, and people handle it in different ways.

I was invited over to a customer's house this week to see her kitchen renovation because she wanted to show me her solution. It was just what we all need... two large drawers that allow containers to be stacked inside each other. I thought you might like to take a peek to give you some ideas for yourself. She also added a couple of Tupperware Micro Fiber Kitchen Towels and Chefs Towels for a splash of colour. Her kitchen is spectacular! Thanks for the tour Mia!

Blueberry French Toast Casserole

Serve for breakfast or dessert!

Blueberry French Toast Casserole Serves: 4

8 slices of white bread (or substitute whole wheat or multigrain)
3 large eggs
1½ cups whole milk
¼ cup maple syrup
1 tbsp. Simple Indulgence™ Cinnamon-Vanilla Seasoning Blend
pinch kosher salt
½ cup blueberries

Slice bread diagonally into large triangles. Set aside.
Crack eggs into the TupperWave® Stack Cooker 3-Qt./3 L Casserole. Add milk, syrup, Cinnamon-Vanilla Seasoning Blend, and salt. Whisk together until combined. Fold in the blueberries. Add the slices of bread and press the bread down into the liquid with your fingers. Make sure all of the bread has been submerged in the custard before proceeding.
Place cover over Casserole and microwave at 50 percent power for 12 minutes, or until the casserole has risen. Let rest for five minutes. Serve with additional maple syrup and sprinkled with powdered sugar.

Tupperware SmartSteamer - Recipes

Here is an update on the Tupperware SmartSteamer. I couldn't wait to try it when it arrived. I didn't have anything ready to cook for dinner because my husband had suggested we dine out, so I took a couple of frozen, boneless, skinless chicken breasts out of the freezer. I made the recipes that comes with the SmartSteamer (a Warm Potato Salad and Tangy Citrus Chicken - recipes to follow) and steamed the chicken breasts for a few minutes by themselves before adding the veggies since they were frozen.

I was delighted with the results! The warm potato salad was excellent and had the texture of steamed (not microwaved) potatoes. The chicken was tender, and the veggies were steamed to perfection! I couldn't wait to try my SmartSteamer again the following evening. I've used it for steaming spinach, broccoli, peppers, and beans. Everything cooks quickly and perfectly!

Here are some recipes to try when your Tupperware Smart Steamer arrives:

Warm Potato Salad

Makes 4 cups

Potato salads are always a hit, whether for a backyard barbecue or a quiet evening at home. Hearty potatoes and savory Dijon vinaigrette mingle for a new twist on an old favorite.

Potatoes

1-1/2 lb fingerling potatoes or small red potatoes

Place whole potatoes in base of Tupperware SmartSteamer. Cover and place in microwave and cook on high power for 16-18 minutes or until potatoes are tender when pierced with a fork. While potatoes cook, prepare Herb Vinaigrette (recipe below). Remove potatoes from Tupperware SmartSteamer and when cool enough to handle cut into large chunks or slices and place in serving bowl. Immediately pour dressing over potatoes and toss gently until combined; season with salt and pepper to taste.

Herb Vinaigrette

2 Tbsp flat-leaf parsley
1 Tbsp fresh rosemary
1 shallot
1/4 cup extra-virgin olive oil
1-1/2 Tbsp balsamic or apple cider vinegar
1/2 Tbsp Dijon mustard
salt and pepper, to taste

Place first six ingredients in base of Chop 'N Prep Chef. Replace cover, pull cord 4-5 times or until herbs are finely chopped and oil and vinegar are blended; season with salt and pepper. Set aside.

And now the chicken:

Tangy Citrus Chicken

Ramp up the flavor of everyday chicken with a zesty citrus sauce. Gentle steaming holds in verdant color from the vegetables in this dish.

Tangy One-Dish Citrus Chicken with Steamed Vegetables
Serves 2

Citrus Sauce
Makes 1/2 cup

1/2 cup fresh basil leaves
1 green onion
2 Tbsp flat-leaf parsley
2 Tbsp capers, drained
1 Tbsp fresh lemon juice
1 clove garlic, peeled
3 Tbsp extra-virgin olive oil
salt and pepper to taste

Place first seven ingredients in the base of your Chop 'N Prep Chef. Replace cover, twist to seal and pull cord 4-5 times to blend to a coarse puree. Remove blade and transfer sauce to a small bowl and season with salt and pepper to taste.

Chicken

1-3/4 cup/400ml water
2 boneless, skinless chicken breasts
1/2 lb/230g green beans, trimmed
1 red bell pepper, cut into thin strips
salt and pepper, to taste
3 Tbsp Citrus Sauce (from previous recipe)

Place water in Water Tray. Place chicken in base of Tupperware SmartSteamer; season with salt and pepper and brush with Citrus Sauce (from previous recipe). Place green beans and red pepper strips in Colander Tray. Microwave on High power 15 minutes or until chicken reaches and internal temperature of 165 degrees F/74 degrees C. Remove chicken to a serving platter and brush with sauce. Toss the vegetables with 1 tablespoon Citrus Sauce and serve with chicken.

note: This recipe was tested at 1200 watts.

I cannot believe it's been so long since my last post. I'll bet you think I haven't been doing anything! Ah, but I have been working behind the scenes, advising, selling, and sharing what I know about Tupperware. I recently celebrated 7 years with Tupperware, a business that found me. And it's been interesting the number of inquiries I've had from afar in the past few months.

My most recent shippement went to Florida... the home of Tupperware, when a very nice lady was unable to find a Flavor Saver in her local market. Here is the note she sent me when it arrived:

BC Hydro Tip on How to Keep Your Home Cool This Summer

BC Hydro's newsletter suggests a few ways to keep our homes cooler with the mid-summer temperatures that would have us almost praying for a reprieve. Here is tip #3:

Try to minimize the amount of heat you generate inside your home. Don't use your clothes dryer and hang clothes to dry outside instead. Try not to turn on your stoves and oven. Instead, use the microwave or barbecue outside.

Here's where Tupperware comes in. The Tupperware Microwave Rice Maker really does a fantastic job of cooking rice and other whole grains! Take it from me, someone who doesn't cook in the microwave, to try it out. You'll never go back to your messy rice cooker or stove top rice making again. Jel-Ring Mold

The Jel-Ring Mold is lots of fun at this time of year or any time of the year for that matter! Here is some information from the product insert on how to mold, unmold, uses, and helpful hints when using the Jel-Ring Mold. Hope you'll find this info helpful.

For 1 week, ending July 30, 2010 purchase the Mini Jel-Ring Mold Set for $11.99, a $31 retail value! It features one 2-1/2 cup mold and four 1/2 cup molds. They are so cute, you have to have them at this price!

The Jel-Ring Mold includes 3 pieces: fluted ring mold, fluted inner seal and Classic Round large seal.

When filled, the sealed mold can be transported to the fridge without spills

Capacity is 6 cups (1.4 liters) with 9-1/2" diameter

Each piece of the Jel-Ring Mold is dishwasher safe

To Mold

Apply inner seal to ring mold. Make sure that it is completely sealed around the mold edge to avoid leaking.

A very light coating/spray of vegetable oil may be used on the inside of the ring mold if desired.

Prepare recipe and fill inverted mold.

Apply large seal and refrigerate mold, still inverted large seal up), until gelatin mixture is firm.

To Unmold

Remove from refrigerator and let mold stand at room temperature for 15 minutes.

Immerse sealed mold in warm water for 20-30 seconds, taking care not to melt gelatin. If mold has been pre-sprayed with oil, it may not be necessary to immerse in warm water.

Remove sealed mold from water, invert mold (large seal up) then peel off large seal. Place chilled serving plate over mold and invert onto plate

Slowly peel off inner seal in a circle and carefully pull upwards.

Lift off ring mold slowly.

Uses

Gelatin-based desserts turn out beautifully piled high in center with fresh berries, peeled orange slices, sliced kiwi or pineapple, and sugared grapes.

Shape chicken, shrimp, potato or pasta salads as a ring. Fill center with cherry tomatoes, crisp carrots, raisins and celery sticks.

Hot, cooked rice can be shaped by the Jel-Ring Mold, and the center filled with creamed chipped beef, curried chicken or sauteed shrimp.

Fill ring mold with juice or punch, seal then freeze. Allow room for liquid expansion in freezer. When frozen, run under warm water for 10 seconds and gently unmold into your punch bowl. This ice ring won't dilute your punch!

For multi-layered desserts, just refrigerate layer by layer in inverted ring mold, starting at the bottom and working your way up to the rim of the ring mold. Make sure that each refrigerated layer is firm enough before pouring next layer.

Shape meat loaf mixture in the Jel-Ring Mold, remove ring mold by inverting onto a shallow 10" Square baking pan and bake. Just before serving, fill center with sauteed mushrooms.

Helpful Tips

When filling with liquids, keep in mind that capacity is to 1/4" below rim of ring mold.

When filling with solids, you can pile 1/4" above rim to later compress with the large seal.

For the perfect molded salad, decrease water by 1/2 cup per 6 oz. package. This will keep the gelatin firm and the fluted design more prominent. When adding fruits or vegetables, decrease the amount of liquid added by 1/4 cup for each 3 oz. box, or single envelope of gelatin.

Before adding other ingredients, chill gelatin until thickened, not set. If gelatin isn't thick enough, ingredients may float or sink.

Do not add fresh or frozen pineapple as an ingredient, only as a topping/garnishing. An enzyme in fresh pineapple keeps gelatin from setting. Cooked or canned pineapple is fine to use.

Gelatin should be completely firm before unmolding. It should not feel sticky on top, nor sag towards the sid if the ring mold is tilted.

Unmold gelatin on a chilled plate to show down melting.

If serving plate is moistened before unmolding, the moist surface lets you slide gelatin to the center if is has unmolded slightly off-center.

20 Helpful Freezer Mates® Ice Cube Tray Ideas!

Pesto: Fill each cube with pesto, seal and freeze. For easy preparation, place cubes in a stainless steel mixing bowl and rest the bowl over a Chef Series™ 6-Qt./5.6 L Dutch Oven pot of cooking pasta (for a makeshift double boiler). The heat from the boiling water will melt the cubes just in time to toss with the hot pasta.

Stocks, Broth & Sauces: Fill each cube with stock, broth or sauce, seal, and freeze. Remove and use as needed.

Lemon & Lime Juice: Fill each cube with lemon/lime juice, seal, and freeze. Remove as needed for adding that zing or lemons/lime flavor to cooking or baking.

Homemade Baby Food: Freeze small amounts pureed fruits, vegetables, starches, and meat in each cube. Fill each cube, seal, and freeze for fresh, unprocessed baby food. To use, take out the desired number of cubes and thaw or reheat before feeding.

Fresh Herbs: Tupperware® Quick Chef, chop fresh herbs. Transfer 2 tbsp. of herbs into each cube, fi ll with approximately 1 tbsp. of water per cube, seal and freeze. Store until you are ready to add them to sauces, soups, stews or salsa.

Leftover Wine: Fill each cube with any type of wine, seal, and freeze. Perfect for adding to sauces. There may be a small difference in color of the sauce but will not affect the taste.

Juice & Pudding Popsicles: Fill each cube with juice or pudding, seal and freeze. When ready to eat, remove from freezer, place in a snack cup and let it slightly thaw until it becomes the consistency of an Italian Ice.

Frozen Fruit Chunks: For the perfect garnish for a sparkling summer drink, place assorted fruits into each cube including strawberries, lemon/lime zest, raspberries, pineapple, or grapes. Fill the remainder of the cube with water, seal, and freeze.

Buttermilk: Fill each cube with buttermilk, seal and freeze. Buttermilk can be frozen to be used in baking. If you would like to use it to make salad dressing, place in the Tupperware® Quick Chef and blend it till it returns to its original consistency.

Egg Whites & Egg Yolks: Fill each cube with egg yolk/egg white, seal and freeze. Use for recipes that call for egg white or egg yolks.

Pancake, Waffl e, & Crepe Batter: Fill each cube with batter. Seal and freeze. Place a cube on a hot fry pan, let it spread out then cook as normal without the fuss.

Coffee & Tea: Don’t water down your drinks. Fill each cube with coffee or tea, seal, and freeze. Use in place of ice for iced coffee or tea.

Tomato Paste & Tomato Sauce: When all you need is a small amount for a recipe, fi ll each cube with tomato paste or sauce, seal, freeze and use as needed.

Leftover Gravy: Fill each cube with leftover gravy, seal and freeze. Remove and use as needed.

Gelatin Squares: Prepare gelatin square recipe on packaging. Refrigerate until fi rm. To loosen, run a small knife under hot tap water and loosen edges.

Flavored Cubes: Fill each cube with your favorite fruit fl avored drink or juice, seal and freeze. Use to fl avor ice tea or other beverages or to add flavor to water in your Tupperware® Sports Bottle.

Onions, Garlic, Chilies, Carrots, & Celery: Chop vegetables using the Tupperware® Quick Chef. Transfer 2 tbsp. into each cube, fi ll with approximately 1 tbsp. of water per cube, seal and freeze. Perfect for adding to casseroles, sauces, soups, stews or salsa.

Chocolate Molds or Fudge: Prepare chocolate or fudge according to directions. Fill the cube with the chocolate, seal and freeze until firm. To loosen run a small knife under hot tap water and loosen the edges.

Leftover Condiments: Fill each cube with leftover condiments like mustard, ketchup, barbecue sauce, salsa, or relish, seal and freeze. Thaw and use as toppings or in recipes.

Cookie Dough: Always have fresh baked cookies on hand. Fill each cube with a heaping teaspoon of cookie dough, seal and freeze. Thaw slightly, place on cookie sheet and bake as directed in recipe.

Sweet Pickles & Refrigerator Dills - Overnight!

Have you been so fortunate as to attend a Tupperware Party lately and discovered the Attendance Special is a set of 2 Small Pick-A-Deli Containers at 40% Off the regular price? So now you have the containers and all you need is the recipe to make your own overnight pickles.

Here are two recipes to fill the bill:

Sweet Pickles

1 lb pickling cucumbers

1/2 medium onion, sliced

4 clovers garlic,smashed

1 cup water

1 cup cider vinegar

1/4 cup sugar

1 tbsp. salt

1 tsp. pickling spice

1 tsp. celery seed

1 tsp. mustard seed

1/4 tsp. turmeric

Slice cucumbers into half-inch thick rounds. Slice onion, peel garlic and smash with side of a knife. Place remaining ingredients in a Chef Series 3 Qt/2.8L Saucepan. Bring to a boil, reduce heat and simmer 5 minutes, remove from heat and cool.. Layer cucumber slices, onion and garlic in a Small Pick-A-Deli Container. Pour pickling liquid over vegetables. Seal and store overnight in the refrigerator before eating.

Refrigerator Dills

5-6 cucumbers

1 cup white vinegar

5 cups water

1/2 cup sugar

1/2 cup kosher salt

2 cloves garlic, crushed

1 large bunch dill

1 tbsp. black peppercorns

1 tsp. dill seed

Slice cucumbers in half lengthwise and then cut into spears. Place remaining ingredients in a Chef Series 3 Qt./2.8 L Saucepan. Bring to a boil, reduce heat and simmer 5 minutes, remove from heat and cool. Place cucumber spears in a Small Pick-A-Deli Conainer. Pour pickling liquid over spears. Seal and store 1-2 days in the refrigerator before eating.

It will accommodate a 10kg bag. Some people like it for dog food, and I've know people to use it for large quantities of produce. It also makes good storage for small children's toys.

Here is one of my favorite Tupperware containers. It is called a "Flavor Saver" and it is the perfect container for storing a cooked chicken, turkey or ham. Notice the handles of the rack that allows you to hoist the contents easily.

This piece from the past was so popular that anyone with a broken container or seal one would opt to keep it and use it broken than be without it!

Here, using the Flavor Saver, I have immersed a thawing chicken in cold water. I had to rescue it from its other use - storing a bag of corn chips. It is the perfect size for many uses.

Chef Stuart's Oatmeal Almond Blueberry Pancakes

Serves 3 - 3 Pancakes per serving
15 minutes

Ingredients

1 1/2 cup whole wheat flour
1 1/2 tsp baking powder (to give some lift)
1/2 tsp. baking soda
Pinch Salt
1/2 cup quick cooking oats
2 eggs
1 3/4 cup lowfat buttermilk
1 tbsp vanilla extract

3/4 cup fresh blueberries (frozen is ok too)
2/3 cup sliced almonds

Mix dry ingredients together except blueberries and almonds. Combine wet ingredients in a Quick Shake. Shake. Add to dry ingredients and mix briefly. Pour batter into hot oiled frypan. Top with blueberries and almonds. Flip when ready. Serve with maple syrup and butter if desired. Repeat with batterl

FridgeSmart Venting Instructions

What if you bought your FridgeSmart Containers before the guide to their use was embedded into the side of the container, and you've misplaced the little guide that came with them?

Here are some solutions:

1. Purchase 1 new container that has the information on it so you have a guide in your fridge
2. Ask your consultant for the FridgeSmart Cling that sticks to your fridge
3. Make a note of the following guide

FridgeSmart
Fresh Just Got Smarter!

Refrigerate fruits and vegetables immediately in Tupperware FridgeSmart containers.

Dry Garlic, Mature Onions, Potatoes, Tomatoes, Winter Squash and unripe fruit are not recommended for refrigerator storage.

Fruits and vegetables are divided into 3 groups - High Breathers (leave both vents open), Medium Breathers (leave one vent open, one closed), and Low Breathers (keep both vents closed)

High (or Heavy!) Breathers include:

Although Tupperware works with the University of Florida and they have a lot figured out, here are some tips that you might find helpful:

Try venting your mushrooms - I find they keep even longer
Store cucumber at room temperature - you will find they do not go slimey. After a couple of weeks they may lose their colour, but they will not rot even once they are cut. (I picked up this tip from a customer who has a produce store)
Vent your cheeses keeping 1 or both vents open
Experiment with 1, 2 or no vents open - find out for yourself what works in your fridge

Tupperware Microwave Rice Maker

This rice cooker is everything it promises to be. In fact it is so good at its job that people love it! I am sometimes asked questions about its use and what can be cooked in it, how long rice and grains need to cook and if it is easy to clean, so I am sharing the package insert that comes with the rice cooker with you to answers those questions.

Finally, perfect rice every time. With the Tupperware® Microwave Rice
Maker you can cook almost any type of rice and/or grain fast, easy, and
virtually mess free. By cooking and serving in one container, you can
save time, energy and space in your kitchen.

Key Features and Benefits
• The Tupperware® Microwave Rice Maker is easy to use. Simply fill
the base with the ingredients, close securely and place in the
microwave.
• Cook and serve in the same container.
• Leftover rice and/or grains can also be stored in the refrigerator
and re-heated in the microwave as needed. Note: The cover is not
liquid tight.
• The Microwave Rice Maker comes in three parts: Base, Insert and
Cover. Assembly instructions are conveniently etched on the Insert.
• The Microwave Rice Maker features a unique double cover that
collects the foam created during cooking and channels it into the
recessed area of the cover, then drains it back into the base. Your
microwave stays clean and safe from spills.
• Maximum fill for rice and water located on the outside of the base.
• The cover handles fold down and lock on the base, giving you a solid
grip when removing hot rice from the microwave.
• For best results, keep rice and water within the guidelines marked on
the container and use the correct power levels and cooking times for
your microwave.

To Use
• Fill the base with rice first and then add water, paying attention to the
maximum fill line. To avoid boiling over, do not exceed maximum
quantities.
• Place the insert on to the base with the rimmed side up.
• Line up the handles of the lid with the handles on the side of the base.
Snap the handles in place by folding down and “clicking” the handles
of the cover on the handles of the base to lock them in place.

For Best Results
• Rinse the rice unless otherwise stated on the packaging.
• Use cold water.
• When cooking with salt (1 tsp.) add 2 – 4 minutes of cooking time.
• Allow rice to stand 5 minutes before serving.
• Fluff the rice after cooking with a plastic non-scratch Tupperware
utensil.

Cooking Guidelines for 4 servings:
All Rice and/or Grain needs to stand for at least 5 minutes before
servings unless otherwise noted below.

Precautions
• The Microwave Rice Maker is safe for temperatures between
32° - 248°F/ 0° - 120°C.
• Do not use in the freezer and do not exceed 248°F/ 120°C.
• Do not cook rice without water.
• Do not add fats, oils, or liquids that contain fat such as milk. Use only
water for cooking rice.
• The Microwave Rice Maker is not suitable for making risotto or rice
pudding.
• Do not use abrasives or sharp utensils to avoid scratching.
• Respect the maximum fill line. Do not overfill to avoid boil-over. For
rice with a high starch content, cook small quantities.
• Always lift the lid away from you to avoid burning from steam buildup.
• Always use oven mitts when removing cooked rice from the
microwave oven.

• Dishwasher safe.
• Refrigerator safe.
• Rinse the entire container immediately after use with cold water to
prevent strong odors or stains.
• To avoid stains, do not add tomato sauce, saffron, curry or other
colored spices. Do not reheat curry or tomato dishes in the
Microwave Rice Maker. Staining will not affect the performance of the
product and is not covered by the Tupperware® guarantee.

Chef Stuart’s Oatmeal Pecan Cookies

When it comes to cookies—and let’s face it, we all love our cookies, it’s hard to find healthy ones out there—but this is my best solution for healthy cookies. Oatmeal takes me back home and incorporating it into cookies is a great way to get fiber into your diet. If you’re on the go, grab a cookie on your way to work or put one in your kid’s lunch box. These are also great for freezing in Freezer Mates® Containers for later!

Makes approximately 24 cookies

Ingredients
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar, packed
1 egg
1 cup all-purpose flour, sifted
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. Simple Indulgence™ Cinnamon-Vanilla Seasoning Blend
½ cup pecans, chopped
1-1/2 cups quick cooking oats

Let’s Bake!
1. Preheat oven to 375°F/190°C.
2. In your Thatsa® Bowl using a Saucy Silicone Spatula, cream butter, white and brown sugars together.
3. Beat in egg.
4. Now combine flour, baking soda, salt, and Simple Indulgence™ Cinnamon-Vanilla Seasoning Blend until well mixed.
5. Fold in pecans and the oats until well mixed.
6. Using a tablespoon from your Measuring Spoons Set, portion out cookie dough, roll into a ball, place onto greased baking sheet and gently press down with thumb.
7. Bake for 8 to 12 minutes or until a light golden brown.
8. Remove from baking sheet and let cool on a rack.
9. Place cookies in the festive Holiday Snack Canister or a Modular Mates® container to preserve freshness, or put in a Freezer Mates® Large 2 and freeze for later.

I love my Tupperware teapot!

When Cheryll showed me her Tupperware catalogue, the beautiful glass teapot immediately caught my eye. I liked the shape, the angled handle and that it was glass! It looked so modern and yet so classic. Of course I ordered the large sized one right away.

It arrived in practically no time at all. It was even better in real life than as a picture. So elegant! Cheryll pointed out the clip on the lid as a nice feature that keeps the lid from flipping when pouring the tea. At first I thought this was a frivolous feature until I started to use the pot and noticed that I no longer needed to put my other hand over the lid to keep it from falling off the pot.

The feature I like best though is the infuser. I’m a tea granny from way back. I like my tea loose. I like that I can put the tea leaves in the infuser, let them steep and when the tea reaches the strength at which I like to drink it, I just remove the infuser from the pot. This is important because tea leaves left to steep begin to take on a bitter taste after a while.

Oh, did I say that I got the Tupperware tea as well? I would pay a lot more for a tea of that quality at the tea store I normally buy my teas from and it is simply delicious!

I think that this makes for a wonderful gift – Christmas, birthday, showers, housewarming... I mean the list is endless.

FridgeSmart Containers

FridgeSmart Containers are Tupperware's biggest selling items. Why is that you ask? Statistics show that a set of 3 containers will pay for itself 4 times in the first year alone with all the food they save. On top of that, the improved quality of your produce will have you recommending their use to everyone you know!

Here is a picture of my FridgeSmart Containers in my fridge. I love the organization and control I have in managing my produce.

Now for a few tips to help you get the most out of your FridgeSmart Containers:

1. Put your produce in your FridgeSmart Containers both naked and dirty
- that means take it out of the bag if you brought your produce home in one
- don't wash it until you are ready to use it... however, I give my lettuce a good rinse and a shake before storing it in the FS containers. That way it is all ready to cut up and spin in my Tupperware Salad Spinner when I'm making salad.

Why should fruits and vegetables not be washed first? It is actually the excess water that causes produce to rot.

2. Feel free to combine veggies in one container. Be sure they have the same venting requirements for best results.

3. Store your empty FridgeSmart Containers in the fridge. Give them a wash and return them to their rightful spot on the fridge shelf; that way they are all ready to go when you need them, and you won't have to find space in the fridge to keep them. Also, you won't have to find space in a cupboard to store them in when they aren't in use and dig them out when you arrive home with your groceries. It'll save you a ton of time and frustration.

- it is so easy to arrive home from shopping and think you'll just put the produce away in the plastic bags until you get the FridgeSmarts out. From experience, I can tell you that the next time you'll think about it will be when you are throwing out those plastic bags of old, past their best fruits and veggies from the bottom of your produce drawer that you didn't get around to using, before your next grocery shopping trip!

If you've never used FridgeSmart Containers and would like to try just one, be sure to get one to store your fresh mushrooms in. You will be amazed at how long your mushrooms will keep... 2 weeks for company, and 3 weeks for family! Once you've experienced the miracle of mushrooms in your FridgeSmart Containers you will know how fresh everything will stay when you use the containers for your other produce items, and before you know it you will want to completely outfit your fridge with FridgeSmarts! (You'll want to host a party to get them Free and 1/2 price too!)

Now let's talk cheese. FridgeSmart Containers are excellent for storing cheese in your fridge. Keep cheese in its package, slicing or grating it from one end. It is not necessary to re-wrap the cheese with plastic wrap and place an elastic around the end of it before placing it in a FridgeSmart Container. Just leave the package open. Also, you may store several different cheeses together in the same container using the same method. However, I caution you to not store your mild cheeses like Cheddar, and Mozzarella along with your smellier cheese such as Gorgonzola and Stilton. They will all store fine... but they will all smell and taste like the stronger cheeses! Ask me how I know!

-one more cheese storing tip: If you ever have a problem with mold growing on your cheeses, be sure to rinse your FridgeSmart Containers out with a vinegar and water solution. The addition of vinegar into the water reduces the pH within the container, preventing mold from growing. This trick works like a charm!

So organize your fridge with FridgeSmart Containers and save yourself a small fortune with all the food you save. Also, feel good about reducing waste and your contribution to the landfill!

Chef Stuart's Starwberry Rhubarb Empanadas

Are you looking for new delicious recipes to use with your Empanada Maker? Try this one any time of the year with frozen fruit. And BTW, now is the time to pick up Tupperware Freezer Mate Containers to freeze your own fruit next season to have on hand to make these nutritious treats year round!

Chef Stuart's Strawberry Rhubarb Empanadas

Empanadas are personal-sized pastries filled with sweet or savory fillings.

Makes 6

2 cups rhubarb, cut into 1" pieces
1 cup strawberries, cut in half
½ cup sugar
½ tbsp. unsalted butter
1 packet store bought shortcrust pastry, thawed

Directions
Preheat oven to 375°F/190°C.

Place rhubarb, strawberries and sugar in your Thatsa® Bowl and mix well with a Saucy Silicone Spatula until sugar has coated the fruit. Heat an 11"/28 cm Frying Pan over low heat with unsalted butter. Place sugared fruit in the pan and cook until fruit breaks down into an almost chunky jelly, 15 – 20 minutes.
Set aside and let cool.

Using your Tupperware Rolling Pin, roll out crust to a ¼" thickness on your Tupperware Simply Perfect Pastry Sheet.

Open your Empanada Maker and using the back of it, press down on the dough making a perfect round cut out. Place cutout on top of ragged edge of the Empanada Maker.

Using a spoon scoop fruit filling into the center of the dough. Make sure you have ½ inch from the edge of the crust space available. Using cold water, wet your finger and run along the edge of the dough. Carefully close the Empanada Maker, trim any excess dough with a paring knife.

On a non-stick baking tray, bake for 25-30 minutes or until crust is golden.

Serve Empanadas on their own with a dusting of confectioner sugar, or with some Vanilla Frozen Yogurt.

Tips

• Let the preparation cool down before filling the empanadas.
• Use the Empanada Maker to cut and fill. This ensures the empanadas are always the same size.

Chef Stuart’s Cucumber and Green Pepper Quinoa

Quinoa is a gluten free grain making it the perfect food for those who cannot tolerate gluten so prevalent in wheat and many other grains. Quinoa seeds have a soap like coating called saponin, and even if they have been washed before you purchase them, they need to be thoroughly washed to remove any remaining residue. An effective method is to run cold water over quinoa that has been placed in a fine-meshed strainer, gently rubbing the seeds together with your hands. To ensure that the saponins have been completely removed, taste a few seeds. If they have a bitter taste, continue the rinsing process.

This recipe sounds so delicious that I have to make it for dinner!

Chef Stuart’s Cucumber and Green Pepper Quinoa

I love this grain because it is so versatile. It cooks faster than rice and it also is higher in protein than any other grain! It can be used in soups, salads and of course my favorite—stews! You can also substitute it any time rice is called for.

Serves 4

Ingredients

4 cups water
2 cups quinoa
1/2 tbsp. salt (use sea salt for added nutrition)
½ English cucumber, cut into 2" pieces
½ green bell pepper, quartered
1 tbsp. red wine vinegar
1 tbsp. extra virgin olive oil
salt and pepper to taste

Let’s cook!

1. Put water, quinoa and salt in Tupperware® Microwave Rice Maker and microwave for 13 minutes.

2. While the quinoa is cooking, put cucumber and green bell pepper in the Quick Chef with the blade using attachment and lightly turn the handle a few times to get a rough chop.

3. Remove cooked quinoa from the microwave and using the Double Colander, drain the quinoa.

4. Put quinoa, cucumber, bell pepper, red wine vinegar and olive oil in an 8 ¾-cup/2.1 L Wonderlier® Bowl and stir using Saucy Silicone Spatula until well combined. Season to taste.

Tasting Notes:

I have to say that I'm not much for microwave cooking, BUT I was so intrigued with the brand new Tupperware Rice Cooker and the preceding recipe that I had to try it. Well, was I amazed and impressed! I cooked the quinoa for 13 minutes and checked it after that. There was about an inch of water on top, but I didn't drain it right away with the idea that I wasn't quite ready with other dinner items and I would keep the quinoa hot. The Quick Chef did its usual fantastic job on the rough cut veggies, and when I went to combine all the ingredients, all the water in the quinoa had been absorbed! So I carried on with the recipe. Perhaps if I'd drained it right away it would have been a little more chewy, rather than soft, but you know, we enjoyed the dish thoroughly! It is definitely a candidate for more seasonings and herbs though, and it makes quite a lot for 4 servings, but I see the potential for the leftovers. Today I started my day with a couple of scrambled eggs, a little grated tasty cheese, a chopped ripe tomato, and a serving of leftover quinoa microwaved 'til warm. My goodness! It was so tasty! Use your leftovers any way you'd use rice. Try it and be pleasantly surprised!

You'll have to forgive me. I meant to take pictures along the way and totally forgot! Next time...

PS. Here it is March of 2011, and I've made this recipe countless times, serving it to many who have remarked on how delicious it is. As I mentioned above, the original recipe needs a little spicing up. The solution is to add a minced clove of garlic for each cup of Quinoa cooked. Most of the time I only cook 1 cup because the recipe makes quite a bit, and it is so easy and quick to cook that I'll cook a fresh batch.

So feel free to vary the ingredients you add, but the musts for this recipe are the garlic, red wine vinegar (double this too), and the sea salt.

We enjoyed it with salmon last night, and were fortunate to have leftovers to go with our scrambled eggs for breakfast!

Chef Stuart’s TupperWave® Stack Cooker Irish Scramble

So many people are enjoying their new TupperWave Stack Cookers and are looking for exciting healthy recipes to go with them. Here is a great nostalgic recipe complements of Chef Stuart. I'll bet they weren't drinking Green Tea back then like we are today!

Chef Stuart’s TupperWave® Stack Cooker Irish Scramble

Sometimes my mom would just use whatever she had in the fridge and create some awesome scrambles. This one brings back some fond memories of waking up on a Sunday morning and having this scramble with a slice of whole wheat toast and a cup of tea.

Serves 2

Ingredients

For the ¾-Qt./700 mL Casserole Cover
3 baby potatoes, cut into ¼" slices
½ tbsp. extra virgin olive oil
salt and pepper

For the Colander
8 spears asparagus

For the 3-Qt./2.8 L Casserole
4 eggs, egg whites or egg substitutes
2 slices turkey bacon, cut into ½" slices
1 chicken apple sausage, cut into ¼" slices
3 tbsp. milk
salt and pepper

Let’s cook!

1. Using a Saucy Silicone Spatula, combine potatoes, olive oil, salt and pepper in a 6-cup/1.4 L Wonderlier® Bowl.

2. Place in the ¾-Qt./700 mL Casserole Cover and set aside.

3. Put asparagus in the Colander and set aside.

4. Place eggs and milk into the 3-Qt./2.8 L Casserole and whisk until well combined. Add the remaining ingredients and combine.

5. Place the ¾-Qt./700 mL Casserole Cover over the Colander and the Colander over the 3-Qt./2.8 L Casserole. Place in the microwave and cook for 10 minutes or until everything is cooked.

6. Serve on a Microwave Luncheon Plate with whole wheat toast.

How to Store Tupperware!

It's true... I am surrounded by very cleaver people. You'll know what I mean when you see how one Tupperware lover stores her collection.

Amy has a great outdoor cupboard on the patio of her city home where she stores her outdoor and entertaining Tupperware, because that's where she uses it. It is handy for guests and especially children to help themselves, and it really reduces the traffic in and out of the house.

Another Use for a Citrus Peeler!

I'm sure you have many uses for a Citrus Peeler that are not listed here, and I'd love it if you would add your comment here or send me an e-mail on what you have found it useful for. I've come up with one that I think is worthy of adding myself.

You know that very expensive anti-aging serum that we buy, hoping to delay the inevitable? Well, when I got down to the last pump I knew there was still some in there, and I wasn't about to sacrifice it. So, I got my husbands tools out and opened the container, and at the bottom was a little cream! I could have used a Q-Tip, but much of the cream would have been absorbed in the Q-Tip, so I grabbed my Citrus Peeler and rescued that valuable cream. I got another 3 days worth of use from it. Over time that'll save me thousands!

I hope you are enjoying your Citrus Peeler. If you don't have one, please let me know, and we'll figure out how to get one for you. It is a must have!

Darcy's Watermelon Feta Salad

Darcy recently hosted his 1st Tupperware Party... and a very successful party it was! The theme Darcy chose was a blender party of Pina Coladas and Strawberry Daiquiris, that paved the way for a tasty Salmon BBQ. One of the accompanyments was a refreshing Watermelon Salad that fit the warm August evening just right.

I made it for a recent dinner party and it got rave reviews, so I thought you might enjoy the simple recipe. Darcy served his salad in the watermelon bowl that was left after making melon balls with the contents and it looked super, but I love the way in looks in the Large Ice Prisms bowl too!

Darcy's Watermelon Feta Salad

6 cups of watermelon cubes
3-4 oz. Feta Cheese, cubed
1/2 red onion cut into fine rings (I forgot to add it to my salad!)
3 T mint chopped
1/4 cup basil
juice of 1/2 lime

Gently mix all ingredients together and chill until serving time.

Enjoy!

Simple Indulgence Cilantro Mojo Seasoning Blend

It's time for a new recipe. We are very fortunate to have a large Hispanic segment within our Tupperware organization, and with that we have their influence on colours and in recipes.

Having been very impressed with Tupperware's exclusive Simple Indulgence seasonings I've tried, I purchased the cilantro mojo seasoning blend, and was curious about how I would use it. Here is the recipe from the package:

Mojo Papas

3 lbs small red potatoes quartered

1/2 onion sliced lenghwise

2 Tbsp extra virgin olive oil

2 tsp Simple Indulgence Cilantro Mojo Seasoning Blend

Preheat oven to 350 degrees F. Place potatoes in baking pan. Using the Saucy Silicone Spatula, mix in onions and extra virgin olive oil. Sprinkle with Simple Indulgence Cilantro Mojo Seasong Blend, tossing to coat. Bake at 350 degrees F for 40-45 minutes or until potatoes are tender.

Tomato Salad with Caribbean
Cilantro Mojo Dressing

Serves 6

2 large tomatoes, cut into wedges
1 large red onion, sliced thin

Mojo Vinaigrette, recipe below

2 large ripe Haas avocados, cut into thin wedges

cilantro leaves, garnish

Caribbean Cilantro Mojo Dressing

¼ cup fresh lime juice
2 tbsp. rice wine vinegar
1 tbsp. honey
¼ cup cilantro, chopped
2 tsp. Simple Indulgence™ Cilantro Mojo Seasoning Blend
½ cup extra virgin olive oil
salt and freshly ground pepper to taste

In the Quick Shake® Container, combine the lime juice, rice wine vinegar, honey, cilantro, Simple Indulgence™ Cilantro Mojo Seasoning Blend and salt and pepper to taste. Add olive oil slowly in small amounts until well-combined. Re-season with salt and pepper, if necessary. Cut the tomatoes, onions, and avocadoes using the Chef Series™ Paring Knife. In a Thatsa® Bowl using a Saucy Silicone Spatula, combine tomatoes, onion and dressing, toss to combine. Add avocado and gently mix. Place the tomato mixture in an Ice Prisms™ Medium Bowl lined with salad greens. Garnish with cilantro leaves.

It might seem an odd title on a Tupperware blog, but I think you'll find it appropriate. I was recently listening to a podcast where My Monthly Mentor Raymond Aaron was interviewing the Rich Dad Poor Dad author Robert Kiyosaki. They were talking about how to become rich. Robert suggested that there are lots of rich people out there who are willing to share what they do and what they know, and that one should volunteer to work for those people. In the process of working for that person one would learn the strategies that made the rich person rich and become rich too!

He also suggested that there are lots of great learning grounds out there, including MLM's and Franchises. It made me think about Tupperware, not that it is really either of these, but that it offers training in all sorts of areas of business. To follow Tupperware's training strategies is to get a great business education. This education can be applied to any business and in all areas of life. Tupperware teaches us how to run a business, and great selling skills, and isn't that something we all need? After all, we are all in sales. When we talked our parents into that new puppy, when we got our first job, our first (and subsequent) dates, a raise... everything we do is sales.

Chef Lucas' Mexican-Style Chicken Burgers

Enjoy a new take on an old favourite! This recipe was created by Chef Lucas for the Hispanic market, but knowing how we love to try new things, I thought you might like to add it to your reperotoire.

Chef Lucas’ Mexican-Style Chicken Burgers

• 1 lb. ground chicken
• 1 egg
• 1 Tbsp. capers
• 1 medium tomato
• 1/2 purple onion finely chopped
• 1 cup cilantro (chopped)
• 1 Tbsp. hot sauce
• salt and pepper to taste
• 4 pieces Pita Bread or Whole Wheat Hamburger Buns
• lemon juice

In a bowl, add egg and beat with salt, pepper and hot sauce. Add chicken, onion and
tomato, finely chopped. Next, add cilantro and capers.

Make medium-size balls and place them in the Tupperware Burger Press. Grill on each side as desired. Once they are ready, sprinkle with lemon juice. Cut the bread in halves and place Mexican-Style Chicken Burgers on them. Garnish with lettuce and tomato and other condiments as desired.

I love Bridal Showers! Do you want to know why? It's because I take such pleasure in giving the Bride to be a beautiful Tupperware gift! The hardest thing of all is deciding what to give with so many perfect items or combination of items to choose from.

Today I attended a lovely Bridal Shower and I want to share with you the gift that I took. Tupperware has a new chef!

Chef Stuart O'Keefe is a handsome addition to our Tupperware family, whose role is to provide healthy, nutritious recipes that consultants can share with their customers. Over the next few months look for new, simple recipes on my blog, and give me a call if you would like me to demonstrate their preparation to you and your friends.

Here is the 1st recipe. I made it and we enjoyed it so much that I made it again the following day! Give it a try.

Chef Stuart's Turkey Burgers

▪ 1 lb. ground turkey
▪ 1 cup red onions, minced
▪ 2 tsp. olive oil
▪ 1 clove garlic, minced
▪ 1/2 tsp. fresh rosemary, roughly chopped
▪ Kosher salt and black pepper to taste

▪ 4 whole wheat hamburger buns

Coat grill rack with oil and adjust temperature to medium heat. Mix turkey, onion, olive oil, garlic, rosemary and dashes of salt and pepper. Mold four one-inch thick turkey patties. Grill for approximately five minutes on each side.

Offer a variety of condiments so your guests can create their own burger. My personal favorites are crumbled blue cheese, caramelized onions, lettuce and tomato jam.

Empanadas Anyone?

I just can't seem to help myself... when I see something fun and different, I really have to try it! So here it is, my 1st attempt at making Apple Cinnamon Empanadas! Delicious! Recipe to follow.

Let's start with the pastry. It was suggested that we use a 15 oz. package of refrigerated piecrust or packaged empanada dough, but I just can't bring myself to use processed foods. I found a recipe on Epicurious that had been review by several people and given a great rating, so I decided to use it. I made it in my Quick Chef and was really pleased with the results, but I will provide the original recipe for you just in case you haven't gotten your Quick Chef yet.

Both the dough and the filling makes enough for 12 pastries. Try them with savoury fillings too.

Empanada Dough

Ingredients

2 1/4 cups unbleached all-purpose flour
1 1/2 teaspoons salt
1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes
1 large egg
1/3 cup ice water
1 tablespoon distilled white vinegar

Preparation

Sift flour with salt into a large bowl and blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal with some (roughly pea-size) butter lumps.
Beat together egg, water, and vinegar in a small bowl with a fork. Add to flour mixture, stirring with fork until just incorporated. (Mixture will look shaggy.)
Turn out mixture onto a lightly floured surface and gather together, then knead gently with heel of your hand once or twice, just enough to bring dough together. Form dough into a flat rectangle and chill, wrapped in plastic wrap, at least 1 hour.

Apple Cinnamon Filling

Ingredients

4 apples peeled and cored
(or a 21 oz. can of sliced apples, drained)
1 lemon (use juice and zest)
1 tbsp. cornstarch
1 tsp. Simple Indulgence Cinnamon & Vanilla Seasoning Blend
1/4 cup sugar
1/4 cup brown sugar
1 tbsp. butter
1/4 cup raisins

Place apples in Quick Chef (Ok, now you need the Quick Chef!)with blade attachment. Add remaining ingredients, cover and process until coarsely chopped. Melt butter over medium heat in Chef Series 9-1/2" Nonstick Fry Pan. Add apples and stir to coat. Lower heat and cook apple mixture 5 minutes until soft. Add raisins and cook until mixture has thickened. Remove from heat and allow to cool slightly.

Preheat oven to 375 degrees F. Roll dough to a 12" circle on the Simply Perfect Pastry Sheet. Using the bottomside of the Empanada Maker, cut 4 rounds of pastry. Re-roll dough as needed. Place a cut round of pastry on the Empanada Maker; moisten edges with beaten egg or water.

Place heaping tbsp. of filling in center of Empanada Maker and close, pressing tightly to seal. Open and remove the sealed empanada and place on baking sheet lined with the Silicone Wonder Mat. Brush tops of empanadas with beaten egg. Bake 12-15 minutes or until golden brown.

At this time of year it is interesting to project forward and imagine what the new year will bring. When a recent survey asked what's important to people, many answered with a common theme. That theme is HOME. HOME is an acronym for the following:

How can we improve our health and that of our families, increase our organization in kitchens and homes, save money, and take care of the environment? Halting or reducing disposible water bottle use also decreases our dependence on foreign oil producers, a state that is good for all of us.

So where does Tupperware fit in? For starters Tupperware has many styles of beverage containers for both hot and cold drinks to choose from, that are reuseable and dishwasher safe. Let's all do what we can to reduce our impact on the environment, by doing something as simple as, taking our water with us in a reuseable container, and to choose containers that are meant to be reused whenever we can. That is better for both us and our environment.

Sandy's Famous Jello Squares

Sandy hosted a Tupperware party recently and served these delightful Jello Squares. We were all impressed with the squares, and had a lot of fun decorating them with whipped cream using the new Squeeze It Decorator. It was fun for both kids and adults! Thanks Sandy for sharing your family recipe with us!

Sandy's Famous Jello Squares

4 small packages - different coloured Jello
1 can Eagle Brand Sweetened Condensed Milk
7 packets Knox Unflavoured Gelatin

Divide the condensed milk into 3 equal parts, 1/3 cup each.

Add 2/3 cup of boiling water and 1 pkg of gelatin to each 1/3 cup of milk, stirring well after addition.

To each pkg of Jello add 1 pkg of gelatin and 1 cup of boiling water. Stir well.

Pour one cooled Jello mixture into a 9" X 12" Tupperware Prep Essentials Cold Cut Keeper, and place in fridge on level shelf for 20 minutes.

Pour milk mixture onto set Jello layer and place back in fridge for 20 minute while this layer sets.

Repeat, alternating Jello with milk mixture and placing in fridge for 20 minutes in between.

Tip: Don't let the layers set too long or the Jello will become too hard and the layers will separate.

Also, be sure to use a Tupperware container to layer the Jello in, as the squares will stick to metal. You could substitute a glass 9" X 13" pan in a pinch.

Before serving place container in warm water for a few minutes for the edges to soften. Then cut with a wet knife into 1" squares or diamonds being careful not to cut your container. Serve on plate or in small decorative muffin cups.

Note: This recipe might seem a little time consuming at first, but with practice you'll have it down pat... then you'll be famous just like Sandy!

Recently a customer asked me to track down a Tupperware Silicone Fluted Baking Pan that she needed for a simple cake recipe a friend had given her. The process reminded me that I should dust my silcone bakeware off and do some baking too. I baked these muffins and shared one with a neighbour who asked me to post the recipe.

Greta's Blueberry Muffins

I was lucky enough to get to know Greta, the woman who was head of food services at an exclusive, private club in Vancouver. Just before she retired, she was kind enough to share her recipe for the best blueberry muffins I have ever eaten.
I guess it pays to rave about someone's cooking!

This recipe makes 24 large muffins that freeze beautifully. They are great to have on hand for breakfast or make them into mini's for snacks after school.

Pictured are my freshly baked muffins, baked in the Tupperware Silicone Muffin Pans. These muffin pans make great muffins and are easy to clean - things that are important to me when I bake.

Greta's Blueberry Muffins

5 cups flour
2 cups wheat germ
1-1/2 cups sugar
2 Tbsp baking powder
2 tsp baking soda
1/2 tsp salt

3 eggs
1 liter buttermilk
1/2 cup oil

3 cups fresh or frozen blueberries

In large bowl, mix together dry ingredients. In separate bowl, whisk eggs; add buttermilk and oil. Add wet ingredients to dry and mix lightly just until moistened. Fold in blueberries. Scoop into Tupperware Silicone Muffin Pans or lightly oiled or paper lined muffin tins.

Bake in 375 degree oven for 20 - 25 minutes or until lightly browned on top.

FridgeSmart Containers are a Necessity!

Just look at what I picked up in my basket at the local farmers market! I couldn't resist showing you what I do with it when I get home.

My 2 butter lettuces are rinsed and placed in a large FridgeSmart Container, where they will be refrigerated until I prepare a salad for dinner. You might notice the fresh broccoli in another FridgeSmart Container, and last but not least, those beautiful greens of Swiss Chard and Beets will occupy a third large FridgeSmart Container. Everything is ready to prepare, and will keep way better than if stored in a plastic bag.

And did you notice? I didn't need to pick up even 1 plastic bag at the market! Can you tell? I love my folding baskets and my Tupperware! They save me both time and money, and I have the freshest produce in town!

(Source: www.tupperware.com) In 1946, Earl Tupper introduced plastic storage ware with airtight seals patterned after the inverted rim on a can of paint which prevented food from drying out, wilting or losing its flavor. Despite this breakthrough, the products didn't sell well in retail outlets, primarily because consumers needed demonstrations in order to see how they worked. In response, the first Tupperware Home Party was held in 1948. This proved a dramatically effective way of communicating.

Tupperware is celebrating its 62 Birthday this year, and 60 years in the home party business. Tupperware was the first company to sell products at home parties, and since then, many companies have copied Tupperware's successful marketing plan!

Food Prices on the Rise Big Time!

A twenty % increase in the cost of flour and rice is nothing compared to the price I paid for flour this week at Capers, which was recently bought out by Whole Foods. Anita's Organic unbleached white flour rose from an already pricey $5.99 to an outrageous $9.99 for 2 Kilos! It is not hard to imagine a loaf of bread going for $10 at this rate.

So, for sure you don't want any of your staples to go to waste. You don't want to lose any of your dry goods to bugs, or to oxidation that causes rancidity.

Here is a recent experience I had with flour that you might be interested in: I bought some whole grain cake and pastry flour that was sealed with an expiry date towards the end of 2009, and when I opened it I took a whiff to make sure it was fresh. Boy, I was glad I did, because although it should have been as fresh as the day it was ground, it was rancid. How did I know? Fresh flour should have no odor at all. If it has any "smell" at all it is rancid. White flour keeps almost indefinitely because the "germ" has been removed. The "germ" is where the wheat berry stores the oil, and it is the oil that goes off. Whole wheat flour will stay fresh for about 3 months when stored in a cool dark cupboard, but for longer storage keep it in the fridge or better yet, keep it in the freezer. Your Tupperware containers like Modular Mates are ideal for storing grains and flours for optimal freshness, and they even work in the freezer. I just have to show you our first crop of grapes ever! We aren't sure what kind they are, but they are so beautiful in the Tupperware Ice Prisms bowl. The grapes look like they are sitting in crystal!

Red Butter Lettuce Salad with Apple Cider Vinaigrette

I love this time of year! Beautiful sunny days and cool night are a great way to go into fall!

Here is a lovely butter lettuce salad perfect for this time of year with delicious, ripe, local fruit. You can't go wrong with any of your favourite fruits, lettuces or veggies in this salad.

The apple cider vinaigrette is about to become your new house favourite!

Red Butter Lettuce with Peaches and Strawberries

Apple Cider Vinaigrette

1/4 cup apple cider vinegar
3 Tbsp minced red onion
2 tsp Dijon mustard
2 tsp maple syrup
1/2 cup extra virgin olive oil

Place all ingredients except the oil in a Quick Shake container and shake. Add oil through pouring spout and shake again. Toss salad with just enough dressing to coat lightly.

Enjoy!

Rock N Serve Brownies Recipe

I couldn't believe how quick and simple it was to bake these yummy brownies in the microwave... ready in 5 minutes!

Rock N Serve Brownies

6 Tbsp butter melted
1 cup sugar
1 tsp vanilla
1/4 tsp salt

2 eggs

1/4 cup cocoa
1 cup flour
1/2 cup chopped walnuts or pecans (optional)

Melt butter in the microwave using the Micro Pitcher Set. Combine melted butter, sugar, vanilla, and salt in the Mix N Stor Pitcher. Blend eggs in the Quick Shake container and add to the sugar mixture. Add cocoa, flour and nuts. Mix well using the Silicone spatula. Spread mixture in the in the RNS large shallow; seal with vent open and microwave on medium high for 5-7 minutes. Using a paper towel dry off the seal and reseal. Let stand 5 minutes, cut and serve.

Voila!

Cranberry Orange Scones

1½ cups all purpose flour
1½ cup whole wheat cake and pastry flour
¼ tsp salt
1/3 cup sugar
2 tsp baking powder
½ tsp baking soda
½ cup cold butter

1 cup dried cranberries chopped if large
1 egg in a measuring cup well beaten with a fork.
Orange juice added to beaten egg to make 1 cup.

Combine dry ingredients.
Cut butter in with a pastry blender.

Add cranberries and toss together.

Add egg mixture and mix lightly just until mixed.
Pat out on floured surface to about 1/2 - 3/4” thickness, making rectangular shape. Cut into squares, then cut squares diagonally to make triangles.
Place on cookie sheet, preferably on a Silicone Wonder Mat, and bake at 400* about 15 minutes until lightly browned.

Makes 12 large or 24 small scones.

Ahhhh... Tasty!
