Tupperware SmartSteamer - Recipes

Here is an update on the Tupperware SmartSteamer. I couldn't wait to try it when it arrived. I didn't have anything ready to cook for dinner because my husband had suggested we dine out, so I took a couple of frozen, boneless, skinless chicken breasts out of the freezer. I made the recipes that comes with the SmartSteamer (a Warm Potato Salad and Tangy Citrus Chicken - recipes to follow) and steamed the chicken breasts for a few minutes by themselves before adding the veggies since they were frozen.


I was delighted with the results! The warm potato salad was excellent and had the texture of steamed (not microwaved) potatoes. The chicken was tender, and the veggies were steamed to perfection! I couldn't wait to try my SmartSteamer again the following evening. I've used it for steaming spinach, broccoli, peppers, and beans. Everything cooks quickly and perfectly!

Here are some recipes to try when your Tupperware Smart Steamer arrives:

Warm Potato Salad

Makes 4 cups

Potato salads are always a hit, whether for a backyard barbecue or a quiet evening at home. Hearty potatoes and savory Dijon vinaigrette mingle for a new twist on an old favorite.

Potatoes

1-1/2 lb fingerling potatoes or small red potatoes

Place whole potatoes in base of Tupperware SmartSteamer. Cover and place in microwave and cook on high power for 16-18 minutes or until potatoes are tender when pierced with a fork. While potatoes cook, prepare Herb Vinaigrette (recipe below). Remove potatoes from Tupperware SmartSteamer and when cool enough to handle cut into large chunks or slices and place in serving bowl. Immediately pour dressing over potatoes and toss gently until combined; season with salt and pepper to taste.

Herb Vinaigrette

2 Tbsp flat-leaf parsley
1 Tbsp fresh rosemary
1 shallot
1/4 cup extra-virgin olive oil
1-1/2 Tbsp balsamic or apple cider vinegar
1/2 Tbsp Dijon mustard
salt and pepper, to taste

Place first six ingredients in base of Chop 'N Prep Chef. Replace cover, pull cord 4-5 times or until herbs are finely chopped and oil and vinegar are blended; season with salt and pepper. Set aside.

And now the chicken:

Tangy Citrus Chicken

Ramp up the flavor of everyday chicken with a zesty citrus sauce. Gentle steaming holds in verdant color from the vegetables in this dish.

Tangy One-Dish Citrus Chicken with Steamed Vegetables
Serves 2

Citrus Sauce
Makes 1/2 cup

1/2 cup fresh basil leaves
1 green onion
2 Tbsp flat-leaf parsley
2 Tbsp capers, drained
1 Tbsp fresh lemon juice
1 clove garlic, peeled
3 Tbsp extra-virgin olive oil
salt and pepper to taste

Place first seven ingredients in the base of your Chop 'N Prep Chef. Replace cover, twist to seal and pull cord 4-5 times to blend to a coarse puree. Remove blade and transfer sauce to a small bowl and season with salt and pepper to taste.

Chicken

1-3/4 cup/400ml water
2 boneless, skinless chicken breasts
1/2 lb/230g green beans, trimmed
1 red bell pepper, cut into thin strips
salt and pepper, to taste
3 Tbsp Citrus Sauce (from previous recipe)

Place water in Water Tray. Place chicken in base of Tupperware SmartSteamer; season with salt and pepper and brush with Citrus Sauce (from previous recipe). Place green beans and red pepper strips in Colander Tray. Microwave on High power 15 minutes or until chicken reaches and internal temperature of 165 degrees F/74 degrees C. Remove chicken to a serving platter and brush with sauce. Toss the vegetables with 1 tablespoon Citrus Sauce and serve with chicken.

note: This recipe was tested at 1200 watts.
