Lemon Artichoke Pesto

Someone just asked me to send him this recipe so I thought I'd provide it here for you too.  It's delicious and so simple you'll be amazed!

Lemon Artichoke Pesto


Makes 1/2 cup

1/2 cup canned artichoke hearts, drained
3 cloves garlic, peeled
1 tbsp grated Parmesan cheese
1/4 cup fresh basil leaves (about 8 leaves)
1/2 tbsp extra-virgin olive oil
1/2 tbsp lemon juice
salt and pepper to taste

Place the first six ingredients into base of the Chop N Prep Chef.  Replace cover, twist to seal and pull cord 4-5 times to process until coarsely chopped.  Adjust seasoning with salt and pepper.

Tupperware Ice Tups Recipe


I hope summer isn't over because I want to make these yummy popsicles/ice-lollies!  These are raw, healthy, and delicious! I've got the perfect little Tupperware Ice Tups for the job!

FRUITY ICE-LOLLIES

This recipe is inspired by the desire to eat/drink "cool and refreshing".

It's nothing fancy, no rocket science involved. Simply grab some fresh fruits of your choice and blend or juice them up into a liquid, and then pour into lolly moulds for the healthiest, most delicious ice-lollies possible

Below is a recipe to get you started...


EQUIPMENT
Blender, Ice-lolly moulds

INGREDIENTS
1 cup of raspberries
Juice of 2 oranges
1 ripe mango
Juice of 3 apples
Juice of 1/4 lemon

DIRECTIONS
  1. Process the ingredients in your blender or juicer (obviously if you blend you'll have more of a smoothie-on-a-stick than a lolly, but anything is good!)
  2. Pour into ice-lolly moulds and place in freezer until solid.
  3. Sit back in a sunny garden, put one arm behind your head, look up to the sky and suck!!

(Oh yes, you may or may not want to share with the little people in your life!)


Raw Coach Top Tips:

  • Make fruit ice-cubes by pouring any excess into ice-cube trays and freezing as normal. Great for livening up still or sparkling water.

It's Berry Season!

Here's a great tip from Theresa a long time Tupperware consultant.  


Berries are delicious, but they're also kind of delicate.  Raspberries in particular seem like they can mold before you even get them home from the market.  There's nothing more tragic than paying $4 for a pint of local raspberries, only to find that fuzzy hold growing on their insides.
Well, with fresh berries just starting to hit farmers markets, we can tell you how to keep them fresh!  Here's a tip I'm sharing on how to prevent them from getting mouldy in the first place:


Wash them with vinegar.


When you get your berries home, prepare a mixture of one part vinegar (white or apple cider vinegar pro probably works best) to ten parts water.  Dump the berries into the mixture and swirl around.  Drain, rinse if you want (though the mixture is so diluted you can't taste the vinegar), and store in Tupperware's FridgeSmart Containers with both vents closed.  The vinegar kills any mold spores and other bacteria that might be on the surface of the fruit, and voila!  Raspberries will last a week or more, and strawberry go almost two weeks without getting moldy and soft.  So go forth and stock up on those pricey little gems, knowing they'll stay fresh as long as it takes you to eat them.

Lemon Artichoke Pesto

Here is a recipe that comes with the handy little Chop 'N Prep Chef, and a recipe enjoyed by all at a recent Tupperware Party.

Lemon Artichoke Pesto

1/2 cup canned artichoke hearts, drained
3 cloves garlic, peeled
1 tbsp grated Parmesan cheese
1/4 cup fresh basil leaves (about 8 leaves)
1/2 tbsp lemon juice
1/2 tbsp extra virgin olive oil
salt and pepper to taste.

Place the first six ingredients into the base of the Chop ‘N Prep Chef. P Replace the cover, twist to seal and pull cord 4-5 times to process until coarsely chopped. Adjust seasoning with salt and pepper.

Serve with crackers or thinly sliced baguette. Enjoy!
