Cauliflower Tabbouleh

Similar to traditional tabbouleh made with wheat bulgar, this cauliflower tabbouleh is grain and gluten free, perfect to serve your raw vegan friends, and great for pot luck meals!  It is a delicious and refreshing salad or meal to serve in this summer heat, and it keeps a few days in the refrigerator, so make a big batch!



This recipe really showcases the Tupperware Power Chef System saving time cutting and chopping.  It does such a great job that once you've tried it, like me, you'll never want to do food prep again without it!





Recipe for Cauliflower Tabbouleh:

The measurements for this recipe are rather vague as it doesn't really matter how much of each ingredient you use.  You can double or halve any of them, or leave them out altogether if you don't have them on hand.

1 medium or large cauliflower minced into rice sized pieces using the Power Chef System 
(if you don't have this tool yet, you can use your food processor... only it'll take you way more time to clean it!)
1 cup of cherry tomatoes halved
1/4 red onion chopped into thin slices
1 clove minced garlic
1 minced jalapeno pepper
1/2 bunch green onions finely sliced
1/2 bunch parsley chopped
1/2 bunch cilantro chopped
handful of fresh mint chopped
2 cups baby kale chopped
1/2 diced cucumber 
juice of 1 or 2 lemons depending on size and taste
2 T EVOO (extra virgin olive oil)
fine sea salt to taste
black pepper to taste

Prep each ingredient and place in a large bowl.  Toss with the lemon juice and EVOO.  Let sit for 15 minutes before serving.  Refrigerated leftovers in an air and water-tight Tupperware container.

Cauliflower is an amazing substitute for rice in stir-fries too!  Using the Tupperware Power Chef a few pulls of the handle turns cauli-florets into rice sized pieces in no time!

How do you chop herbs?  Flat leafed or Italian parsley here...
