Make a Great Impression!

Ok, I have lots to write about but it seems, so little time!  Hearing from a new reader that I haven't been around lately has inspired me to try to Impress you!

A short time ago I was invited to a pot-luck lunch.  I love preparing something creative and special to dazzle, but the host phoned and asked me to bring a fruit plate.  Now while I love fruit, I couldn't get too excited about a fruit plate, and then I thought "it's all about presentation"!  So I set out to create an Impressive presentation!

I'd recently purchased the Tupperware Impressions Serving Centre but had yet to use it.  I filled it with beautiful ripe fruit, reserving 1 of the 6 sections for some decadent dark chocolate.  I filled the centre container with a non-dairy cashew dip that tastes like cheesecake!  My dessert was fully raw, so very healthy, and very beautiful.  It certainly looked Impressive sitting there in all its glory at the end of the table.  No one could wait to dig in, and I have to say that everyone was raving about it... not just how it looked, but how it tasted.

Oh, and the Serving Centre was so easy to transport in my car with its perfectly fitting cover.  No Saran Wrap or spills!  I wish I'd taken a picture with the cover on to show you.

Cashew Cream Dip

1-1/2 cups cashews (soak 8 hrs or overnight, then rinse before use)
1/2 cup water
2 tablespoons maple syrup or honey
1 tablespoon fresh lemon juice
1/2 tsp pure vanilla extract
1/4 tsp sea salt

Combine all ingredients in a high speed blender until smooth.  If you don't have a high speed blender, don't worry.  Because the cashews are soaked, they will blend well in a regular blender or food processor.  You may want to start with a little less water and add more as necessary to obtain a good consistency for dipping.

This dip will keep for a week in the fridge.
