I hope you enjoyed the excitement of the Winter Olympic Games held here in Vancouver, Canada! Canada won a record number of Gold metals for any host country in history and for that we are all proud as if we'd won them ourselves. Chef Stuart's Oatmeal Almond Blueberry Pancakes

Serves 3 - 3 Pancakes per serving
15 minutes

Ingredients

1 1/2 cup whole wheat flour
1 1/2 tsp baking powder (to give some lift)
1/2 tsp. baking soda
Pinch Salt
1/2 cup quick cooking oats
2 eggs
1 3/4 cup lowfat buttermilk
1 tbsp vanilla extract

3/4 cup fresh blueberries (frozen is ok too)
2/3 cup sliced almonds

Mix dry ingredients together except blueberries and almonds. Combine wet ingredients in a Quick Shake. Shake. Add to dry ingredients and mix briefly. Pour batter into hot oiled frypan. Top with blueberries and almonds. Flip when ready. Serve with maple syrup and butter if desired. Repeat with batterl
